Taco catering: what to know

What the job involves, what changes the price, and what to ask a pro.

What taco catering is

A taco caterer sets up a taco bar with meats, tortillas, salsas and toppings, so guests can build their own tacos at a party or event. Hosts hire one for birthdays, school events and casual gatherings where guests enjoy choosing their own combinations.

Signs you need it

  • You want a fun, interactive meal where guests build their own tacos
  • The guest count is large and you want a menu that most people will eat
  • Guests have mixed tastes and you want a few protein choices and toppings
  • You want fresh salsas, lime and toppings set out as the guests arrive
  • You want the taco bar set up and taken down without your help

What the pro does

  • Takes the guest count, the proteins, the topping choices and the dietary needs
  • Plans the taco bar, the tortillas, the salsas and the toppings
  • Cooks the proteins at a permitted kitchen and holds them at a safe temperature
  • Sets up the bar with warmers, serving spoons, labels and the toppings
  • Refills the bar during the event and keeps the tortillas warm
  • Clears the bar and packs the leftovers as agreed

What changes the price

Every job is different, so we do not publish prices. These are the things that move the quote up or down.

  • Guest count and the number of proteins on the bar
  • Number of salsas, toppings and sides
  • Vegetarian options and how they are prepared
  • Staffing for setup, refills and cleanup
  • Equipment such as warmers, bar stations and serving pans
  • Length of the event and how long the bar must stay stocked

What a written quote should spell out

  • Each protein, tortilla type, salsa and topping, with the portion size
  • Vegetarian options and how they are kept separate
  • Warmers, bar stations and serving pans included
  • Staffing for refills and the hours on site
  • Setup, service and cleanup times

Questions to ask before you hire

  • How many proteins and salsas do you offer, and which are the spiciest?
  • How do you keep the tortillas warm and soft through the event?
  • Are the vegetarian proteins cooked separately from the meat?
  • How often do you refill the bar, and who does it?
  • Which toppings contain dairy, nuts or gluten?
  • Do you hold a health permit, and where is the food cooked?

Red flags

  • Serves cold or dried out tortillas at the start of the event
  • Cannot say where the meat is cooked or how long it is held
  • Will not label the spice level of each salsa
  • Has no refill plan for a long event
  • Asks for payment before the proteins and toppings are confirmed

What you can do yourself

A host can set up a simple taco bar with store bought tortillas, cooked ground meat or beans, and a few fresh toppings, keeping the hot food hot and the cold toppings chilled. Hire a taco caterer for a large group, several proteins, a bar that must be refilled through the evening, or a menu that needs to be held and served safely.

Licenses and permits

Food businesses commonly need a health permit or a food handler card from the local office that oversees food safety. Ask the caterer for its permit and staff cards, and check the rules for the kitchen and the site where the food is served.

Taco catering questions

How many tacos should I plan per guest?

Ask the caterer for its portion guide. Tell them whether tacos are the main meal and whether there are other sides on the table.

Can guests get a taco without meat?

Yes, if the caterer offers a vegetarian protein. Ask whether it is cooked apart from the meat, and whether the tools are kept separate.

Are the salsas made fresh?

Ask the caterer which salsas are made the same day and which are made ahead. Fresh salsas are usually better, and the caterer should tell you its holding plan.
